OUR TERROIR IN CHICHÉE
Our vineyards are located in the village of Chichée. The total surface area of Domaine Jacquinot extends over 7.5 hectares.
The estate is composed of 18 distinct parcels, each with its own terroir characteristics, forming a unique “climat.” Among these parcels are renowned climats such as Vaucoupin, Conrois, Champs-Boisons, and Paradis. Each of these climats benefits from specific conditions in terms of exposure, soil depth, and drainage, creating a true mosaic of terroirs that shapes the character of our wines.
This diversity is particularly evident during the harvest period: each parcel evolves at its natural pace and is harvested at its optimal moment. This delicate balance forms the very essence of our vineyard identity and is directly reflected in the personality of our wines.
Our terroir is rooted in Kimmeridgian subsoil, the geological signature of Chablis, formed during the Jurassic era. Clay-limestone soils, enriched with small fossilized oysters (Exogyra virgula), provide ideal conditions for the vine and naturally limit yields.Each parcel expresses its own personality: some feature deep soils over marl substrata, while others lie closer to the bedrock with small stones, giving our wines their distinctive character and unique balance—a true reflection of the terroir.
WINEMAKING
Our winemaking is based on a carefully controlled approach, focused on preserving the natural character of the grapes and the purity of the wine. Each stage of the process is carried out with attention to freshness, balance, and clarity.
Our wines are produced exclusively from the Chardonnay grape variety, ensuring that the fruit profile remains at the forefront. Before fermentation, a gentle pressing is performed to preserve the grapes’ aromatic purity.
In our cellar located in Chichée, the wines ferment slowly in stainless steel tanks using selected yeasts.
Finally, the use of sulfites is intentionally kept to a minimum: they are used only to protect the wine from oxidation and spoilage, ensuring its proper preservation.
A light filtration is carried out before bottling to ensure clarity and microbiological stability, without diminishing or altering the wine’s character.
Thanks to this low-intervention approach, our wines achieve a harmonious balance between fruit aromas, freshness, and minerality. The ageing process is carefully managed to preserve the wine’s liveliness and natural expression.
The result: precise, clean, and elegant Chablis wines.
